There are any number of ways to preserve food for use at a later date. This goes well beyond some plastic wrap and a fridge. Some of these methods are relatively new and use modern equipment, others are relatively old and do not require any modern equipment.
Canning is most often done in glass jars with metal lids. You will need a pressure cooker to do a good job of this. What are you in effect doing is pasteurizing the food whether it be meat or vegetables then vacuum sealing it to insure no microorganisms . . .
